Interview whomever it will be that you intend to hire. Find out their credentials, know what they believe. Make sure that they incorporate you in the goal setting process.
Some people choose to meet multiple times a week and some people meet with an expert twice a year. The beauty of a true health and wellness plan is that it is as individualized as you are!

Absolutely use nutritionists and work with the resources available to you! As a runner, this is something I learned as I started training with my personal trainer for my various races. Properly fueling for activities, runs, swims, exercise, etc. actually helps you lose weight! It has worked really well with me and understanding what is good food (fuel) vs. not so good will help everyone.
